Instant Pot Whole Chicken

 

I don’t often buy whole chickens, but I really wanted to try it in the Instant Pot. It was on sale this last week, so I picked one up to make this weekend. It was REALLY easy to make in the Instant Pot and the entire chicken was cooked fast! Best of all, it was VERY juicy and flavorful. The chicken was done quickly and beautifully – falling off the bone – making it really easy to carve!

You could make a whole chicken, shred it up, and have it for recipes all week long! Lunches, dinner, all ready to go!

One chicken was enough for 2 dinners and some leftovers for lunch for our family. We ate the first meal kind of like a Thanksgiving meal – complete with stuffing and mashed potatoes! We used the leftover chicken from that meal and made it into taquitos. Simply mix the chicken with some cream cheese and dry ranch seasoning. Roll in tortillas (corn or flour) and bake in an oven until heated and crispy. We baked a few in our air fryer too! YUM!

 

Ingredients:

  • 1 whole chicken
  • 1 cup chicken broth
  • Spices as desired – I used paprika and some maple smokehouse seasoning

 

Directions:

I used the rack that came with my Instant Pot, so the chicken was easy to remove once cooked. Pour 1 cup chicken broth in the bottom of your pot. Add in the chicken. Sprinkle Chicken with your preferred seasonings.

Close Instant Pot. Use the Chicken setting and change the time to 25 minutes.

Once chicken is cooked, allow the pressure cooker to do natural release. This allows the juices in the chicken to rest. Important for big meat items like this. Mine took about 15 minutes for natural release, but could take up to 30 minutes (15-20 is probably about normal). Remove from pot and slice as desired.
