We went out for some all you can eat Shrimp on our Anniversary last month. It was sooo goood! I have been craving Beer battered shrimp ever since. I’ve never considered making it myself, but the craving for it got to me this last week and my laziness/frugality over not wanting to go to a restaurant won out. I was going to try making it myself.
We don’t have any beer (we don’t drink), so I figured there had to be another way to make it without using beer. The answer? Club Soda. Another bonus: Club Soda is super cheap (I can even make it in my Sodastream!)
The best part: They turned out FANTASTIC. So FREAKING good! BETTER than the restaurant. Seriously, they were that delicious!
After dipping 2lbs of shrimp, we had batter left, so I fried some Mozzarella sticks (string cheese) and carrots. YUM! You can pretty much dip anything in this batter, fry it, and it will be DELICIOUS! The Mozzarella sticks were WAY WAY better than ones you get in a restaurant.
I am making it AGAIN this week. Yes, I still have craving for it because it was so good. Hopefully, this next time will help curb the craving so I can go longer than a week without these delicious morsels of heaven!
Ingredients:
- 2lbs of fish, chicken, shrimp – anything you want to batter and fry! Mozzarella Sticks, Veggies, etc.
- 1 1/4 cup flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 8 – 16 oz club soda
- 1 tsp salt
- Seasoning of your choice
- oil for frying
Directions:
Heat oil in a heavy pan to 375. The oil needs to be 3″ – 4″ deep
Prepare whatever you are planning to fry. Mix together 1 cup of flour, 1/4 cup cornstarch, baking powder, and salt in a bowl. Stir in enough club soda for it to make a thin pancake batter. You don’t want it too thick, just thick enough to coat a spoon. (I did not measure, just stirred and added until it looked good!). Add in whatever seasoning you wish to season your batter with.
Mix together 1/4 cup flour and 1/4 cup cornstarch. Dredge whatever you are planning to fry in the flour/cornstarch, shake off excess. Then dip into the batter, allow excess to drip off, and carefully add to the hot oil. Fry until golden brown, turning in the oil as needed. Take out of oil and drain on a cooling rack or on paper towels.
Eat and enjoy!
