I’ve been meaning to blog this recipe for quite a while now, but I keep forgetting to take a picture. Well, I remembered this time, but only after my kids had eaten almost half the pan – ha! So the other half of that picture is crumbs!
My kids LOVE cornbread. You should hear the excitement when they smell it baking in the oven and they realize I’m making cornbread. This is by far the best recipe I have found. Probably all the butter and eggs…
The cornbread is THICK! It makes quite a bit of thick, delicious, sweet cornbread. I like to cut the recipe in half and use it as a crust for a Mexican pizza! Just place your favorite taco toppings on top of the baked cornbread, cover in cheese, and heat until melted. Soooo good!
This is always my go-to cornbread recipe. Maybe someday I’ll take one of those Pinterest perfect pictures of a slice of it, but it always gets gobbled up too fast around here!
Ingredients:
- 1 cup butter, softened
- 1 1/3 cup sugar
- 4 eggs
- 1 tsp salt
- 2 cups buttermilk
- 1 1/4 cup cornmeal
- 2 3/4 cup flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
Directions:
Heat oven to 350 degrees. Grease a 13×9 baking dish
Cream together the butter and sugar. Add in the eggs and mix until combined. Add in the cornmeal, salt, flour, baking powder, and baking soda and mix until just combined. Slowly add in the buttermilk and mix until fully incorporated.
Pour into baking dish and bake until golden brown and set in the middle – anywhere from 25 – 40 minutes.
