Empanadas

The BEST Empanadas I can remember were at Mister Donut in El Salvador. I have been wanting one of those Empanadas again for years now. I have no idea if they even sell them anymore, as it was 20+ years ago! I had yet to have one as good as I remember them being.

Then while at Disneyworld, at the Wine and Food Festival, I had the Empanada at the Caribbean booth. It was soooo good! It reminded me of the Mister Donut Empanada. It also made me wonder why I’ve never tried to make them before.

I decided to try to make them. The first time, they turned out good, but I knew they needed a bit of tweaking. The second time – oh so good! I could have eaten the entire pan myself. They may be my new favorite thing!

You can put anything as the filling. First time, I just put in the taco meat that we normally eat. Second time, I put in some leftover chicken chili. It was delicious.

Basically, you can put anything inside this dough and it’ll be good. It worked GREAT for leftovers!

You could put in fruit, or chocolate, or something sweet, brush the dough with cinnamon and sugar, and you’ve got a delicious dessert!

In other words, this is a great all-purpose dough that you can fill with whatever you’d like.

Now I want to go make some more… Mmmm…

 

Ingredients:

  • 1 cup water
  • 1 1/2 sticks butter
  • 2 tsp salt
  • 1 tsp paprika
  • 2 3/4 cup flour
  • whatever filling you’d like (make sure filling is cooked)

 

Directions:

Heat the water and the butter in a saucepan over medium heat until butter is melted. Remove from heat and add in the flour, salt, and paprika. Stir until a wet dough comes together. Wrap TIGHLY in plastic wrap and refrigerate for an hour or more.

Heat oven to 400. On a floured surface, roll out the dough to 1/4 inch thickness. Cut out circles. Fill with your desired filling. Fold in half and press the edges together to seal. Crimp with a fork. Bake until golden brown, about 20-30 minutes.
