Homemade Microwave Caramel Popcorn

I LOVE me some Caramel Popcorn
Most that you buy is just…
meh…
The BEST I have every bought
was in Rehoboth beach in Delaware
and that is a LONG trip from Oregon!
but this homemade stuff
is even BETTER!

It is fresh,
delicious,
and so freaking good
I could probably eat the whole bowl
Luckily,
I have 3 kids & a Husband to share it with
(the baby doesn’t eat it… yet!)
so I don’t eat it all 🙂
Plus, it is EASY
all done in the microwave
in minutes!
Ingredients:
  • Plain popcorn – I use 4 bags of my Plain Brown Bag Microwave Popcorn. Or approximately 1 cup of Unpopped popcorn (I have no idea how many cups that is popped… I haven’t measured)
  • 1/4 cup Corn Syrup
  • 1 Cup Brown Sugar
  • 1 stick of butter (1/2 cup)
  • 1 tsp vanilla
  • 1/2 TBSP Baking Soda
Directions:
Put the Corn Syrup, brown sugar, butter, and vanilla in a bowl. Microwave it for one minute and then stir it together. Put it back in the microwave for 3 1/2 minutes. Remove from microwave and add the baking soda. The mixture will GROW after adding the baking soda. My kids love that part! Science in the kitchen 🙂 After you mix in the Baking Soda, pour it over the Plain Popcorn. I place all the popcorn in a large brown bag (that you get from the grocery store) and pour the caramel over it. Then we close the bag and shake – ALOT! The kids like this part too. If you have a bowl with a lid, you could shake it in that too 🙂 I just realized I have a large bowl with a lid that I could have been shaking it in… *doh* Guess I’ll just use that next time!  Now enjoy your fresh, homemade caramel popcorn!
