Last night,
I made up a new lasagna
It was sooo good!
And I didn’t take a picture!
Oh well!
I’ll blog it anyway
so I can remember to make it again
because it was outstanding!
I am really starting to think
that my Cafe Rio Chicken
can be used in just about anything!
I made a big double batch the other day
and decided to use up a few things in my fridge
and make a lasagna
It is not a traditional lasagna
but it was freaking good!
None of the measurements are exact
just throwing things together
into a delicious mess of a lasagna
Will be making again!!
Ingredients:
- 9 lasagna noodles (I used whole wheat)
- 1 lb of Cafe Rio chicken
- 1 16oz container of low fat cottage cheese
- 3/4 of a jar of Alfredo sauce
- 3/4 – 1lb of shredded mozzarella
- a little cheddar/Mexican cheese mix for the top
Directions:
Heat oven to 350
Boil the lasagna noodles until Al Dente. Mix the cottage cheese, Alfredo sauce, and mozzarella in a bowl. Place 3 noodles into the bottom of your pan (I think my pan was a 12×8 or something, just one size smaller than the traditional 13×9). Place 1/3 of the chicken on the noodles and top with 1/3 of the cheese mixture. Repeat for 3 total layers. I sprinkled a little cheddar up on top of the lasagna. Then baked for about 30-40 minutes (I lost track of the time)
