On our trip this summer to Utah
We finally ate at Cafe Rio
Oh.My.
I fell in love!
So I had to make some
Cafe Rio crockpot chicken
when we got home..
We have heard people speak of Cafe Rio
but honestly,
when places get talked up so much
and we finally eat there
it never lives up to our expectations,
but this place exceeded our expectations
It was so goooood!
I am sad we don’t have one closer 🙁
When I got home from Zumba
and left this in the crockpot for my family
my husband was like
“That chicken was SO GOOD!”
This chicken is VERY versatile
You could use it in MANY different ways,
Use it in many different recipes
We made it into burritos
with some black beans 🙂
This chicken is so juicy and delicious
the taco/burrito does NOT even need cheese!
*WHAT?!?!*
I can’t believe I am saying something doesn’t need cheese
Make a double or triple batch of the
Cafe Rio crockpot chicken
and freeze it
It is DELICIOUS
You are going to fall in love with this chicken too

It is EASY and SIMPLE to make
making it that much better!
Cafe Rio crockpot chicken Ingredients:
- 2lbs chicken (I used 2 VERY large chicken breasts)
- Half a Bottle of Italian Dressing (I used fat free)
- 1 TBSP Cumin
- 1 TBSP Chili Powder
- 1 pkg Ranch Dressing mix (mix it with 1/2 cup water)
- Minced Garlic – to your liking (2-4 cloves)
Directions:
Place all ingredients in your crockpot and cook on high 4-6 hours or low 8-10 hours. Shred the chicken in the crockpot. I like to let it sit in the juices for a bit before serving.
We serve it with Black Bean and all our favorite taco/burrito toppings. Double or Triple this and freeze – it freezes beautifully! YUM!! You are going to love this Cafe Rio crockpot chicken!
