My Husband wanted some curry,
so I made up a quick and easy chicken curry for dinner
and it was pretty tasty!
I have to say,
I am not a big fan of curry
I personally would rather have some Butter chicken over curry
I think it tastes better
but my husband enjoys curry,
so I thought I would make it for him 🙂
(He LOVES Butter chicken as well)
But this was pretty good!
Ingredients:
- 1lb cubed chicken breast
- 1 sliced/cubed onion
- 1 potato, cut into small cubes (optional – I was out of potatoes :P)
- 4-5 cloves of garlic
- 1 can Coconut Milk – I used lite
- 2 tablespoons of curry powder
- 2 tablespoons of Garam Masala
- 2 tablespoons of butter
- Olive oil
- Hot Rice
Directions:
Saute your onion and garlic in some olive oil. Add in the butter and melt. Once melted, add in the curry and Garam Masala until blended. Stir the coconut milk, and then slowly add it to the spices and veggies. Add in your chicken and potato. Bring the pan to a boil, reduce heat and let the saute pan simmer. Cook until the chicken is cooked through. Serve over hot rice.
