I needed a quick and easy dinner
so I threw this
Easy, delicious chicken bacon casserole together
and topped it off with some bacon
so my son would think it was great
Well,
it worked
All the kids loved it
It was easy, pretty tasty,
and all ingredients I have around the house
Ingredients:
- 1lb of chicken, cubed or shredded
- 6 slices of bacon or turkey bacon
- 2 cans of Cream of Chicken soup or 1 cream of chicken and 1 cream of cheddar
- 2 cups of shredded cheese – I used cheddar, but Monterrey Jack would be delicious!
- 1 box of Spiral Pasta (around 16oz) I used Whole Wheat
- Garlic powder
- salt and pepper/Montreal Steak Seasoning
Directions:
Heat oven to 350
Cook the bacon in a saute pan until crispy. Then cook the chicken (if not already cooked) in the bacon drippings. Add some salt/pepper or Montreal Steak Seasoning. While cooking the chicken, boil some water and cook the pasta according to box directions. Once chicken is cooked and pasta is boiled, drain the pasta, mix in the chicken, add the cream soups, 1.5 cups of cheese and some garlic powder together. I just did it in the large pasta pot. Then pour into a casserole dish, top with remaining cheese and crumble the bacon up on top. You could mix the bacon into the casserole, but I like is crispy! Put in the oven at 350 and heat until warmed through, about 30 minutes.
