Zucchini muffins or bread

I LOVE Zucchini Bread! I think I prefer it to Banana bread, but we always have bananas around, not Zucchini. So it is always a treat for me to get Zucchini bread. I used to make it in a loaf, but with small children, putting it into mini-muffin tins makes it so much easier for them to get themselves, so I am not always slicing the bread for them! Plus it has a vegetable in it, so it makes it healthy, right? (just ignore the chocolate chips….)

I’ve tried different recipes, and this one is my favorite. It works well as a loaf or muffins… and now I am wishing my kids didn’t eat these so fast (seriously, they are gone within minutes…) and I had some more right now…

 

Ingredients:

  • 3 cups shredded Zucchini
  • 1 2/3 cup sugar
  • 2/3 cup vegetable oil
  • 2 tsp vanilla
  • 4 eggs
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp baking powder
  • Nuts or Chocolate cups (optional)

 

Directions:

Heat oven to 350. Spray your 2 loaf pans or muffin tins with non-stick spray

Mix the Zucchini, sugar, oil, vanilla, and eggs in a large bowl (or in your kitchen aid, if you’re like me!). Add in the rest of the ingredients and mix until combined. My kids love Chocolate chips in the bread. Add in as many as you want to taste (usually I do about 1 cup).

For mini-muffins, it usually only takes about 10-12 minutes to cook through. 2 loaf pans will take about an hour to cook through. Check the center of the loaves with a toothpick before removing from the oven.
