I totally forgot to get a picture – so out comes the trusty crockpot icon 🙂  I know it’s not summer yet…. but I’m too lazy to get another icon… HA!
I made the BEST version of 15 bean soup yet. Seriously, it was sooooo good! I used out leftover Easter ham and ham bone in it. We have always made a good soup, but this time, it was outstanding! I just have to get it written down, even though I forgot a picture… I could eat several bowls of it – in fact, there are lots of leftovers, I may need a late night snack 😉
This is a staple for us after holiday’s. It is a delicious soup that uses up the ham bone that we would not usually use. Plus it is delicious – especially this recipe!
Ingredients:
- 1 pkg. 15 bean soup (there is the Hurst brand in most grocery stores, or we buy it in bulk at Winco)
- water (about 8 cups)
- 1 Ham hock with meat still on it or leftover ham (or both!)
-  2 Tbsp Worcestershire sauce
- 2 Tbsp minced, dry onion
- 2 Tbsp minced garlic
- 6 oz can tomato paste
- 14.5 oz can diced tomatoes
- 1 Tbsp smoked Paprika
- 1 Tbsp Chili Powder
- 1 tsp salt
Directions
Place the beans in your crockpot and cover it with water. Leave to soak overnight.
In the morning, pour off the water. Then add more water until the beans are covered by about an inch or so. You can add all the ingredients in now, but I didn’t have time first thing in the morning, and I just wanted to get the beans cooking. About mid-day, I added in all the other ingredients and stirred. I cooked it on low for a total of about 10 hours. Take out the ham bone, stir and serve. YUM!!
I tossed in all the leftover ham and the bone. There was lots of ham. It was delicious. I am certain that the tomato paste and the Worcestershire sauce are what really made this soup stand out. I shall be making it this way from now on. Soooo DELICIOUS!!!
