I Love tacos – put it in a Tortilla and I am a happy girl! (especially those bake at home Tortilla Land Tortillas from Costco – YUM!!). I had this recipe on my to-try list for a long time, and since we are remodeling our kitchen and getting new countertops (YAY! Quartz countertops!), we are trying to stick to crockpot or dishes that make few dishes (as we don’t have a kitchen sink, or dishwasher at the moment). So I decided to finally try this one out.
It was FANTASTIC! So easy too with only a couple of ingredients! Plus, it is low in calories and figure friendly (as Rachael Ray would say!). I think it was labeled as a Weight Watchers favorite on Pinterest, and I can see why. Delicious, juicy, flavorful! An easy go to for any meal. I could see using this meat in other recipes as well – any that call for a shredded chicken – it would just make it more flavorful. I find it similar to my Cafe Rio Chicken.
I ate some before the rest of my family, as I had to go to Kindergarten Orientation for my son, which was during dinner time. When I got back my husband RAVED about the chicken: “I ate 3 tacos – I couldn’t help myself, it was sooo good!” He then took some of the leftovers, made them into tacos, but since they were so juicy, he decided to make then enchilada style, pour more sauce over the top of them, and took that to work for lunch – YUM!! I found the meat so delicious and flavorful, I didn’t even have to use much cheese on my taco to make it yummy (even more figure friendly!!). I added black beans to the recipe at the last minute, because it sounded good (and it was!). So there are pictures with and without black beans!
I love delicious dishes, that the whole family loves, is “figure friendly,” and only takes a few ingredients!
Ingredients:
- 1+lbs of chicken breast (I used 2 very large breasts, probably was closer to 1.5lbs. Could probably do 2lbs, there is plenty of sauce/liquid!)
- 1 14oz can of chicken broth
- 1/4 cup taco seasoning or 1 pkg. of taco seasoning (I buy the large thing at Costco, or you could make your own)
- 1 pkg. Dry Ranch Dressing
- 1 can black beans, rinsed and drained (optional)
- Tortillas – corn or flour – or put over chips and make nachos!
- any toppings that you like on tacos/burritos
Directions:
Place the chicken, the broth, the black beans (optional) the taco seasoning, and the dry ranch into your crockpot. Cook on high 4-6hrs or on low for 8-10 hours. I like to shred the chicken about an hour before we eat, so it gets a chance to soak up the juices! I decided to add the black beans at the last minute, and they heated up nicely in that last hour. Place in your favorite tortilla, or over chips. Top with your favorite toppings!
