Grumble… My Chromebook is working extra slow right now… We’ll see if I get this done!

I LOVE Pretzel Rolls. My Aunt got me addicted when she had them at a party and then brought me a box last time she visited (her son worked for a company that makes them). However, to buy them, they are very expensive and I am frugal… So I had to learn to bake my own.

I made these last week to eat our Paprika BBQ chicken on (recipe hopefully coming tomorrow!)… They were sooo good! I should have made a double batch just for me to eat the other batch plain. The kids LOVED them and dug in (which meant no leftovers of the rolls! Yep – double batch next time!

Mmmmm… They were so good! I love homemade pretzels and these make the BEST hamburger buns!

Ingredients:

  • 4 1/2 cups all-purpose flour
  • 2 tsp salt
  • 1 1/2 cups warm water
  • 1 tbsp sugar
  • 2 tsp active dry yeast
  • 4 tbsp butter, melted
  • 2/3 cup baking soda
  • 1 egg- whisked
  • Kosher Salt

 

Directions:

In the bowl of your stand mixer (you could also do by hand, if you wish), mix the water, sugar, and yeast together and allow the yeast to bloom (or starts to look bubbly) – about 5 minutes or so. Add in the flour, salt, and melted butter and mix together using the dough hook attachment. Once the dough comes together, allow the mixer to knead the dough for about 5 minutes, until you have a smooth ball of dough and it pulls away from the sides of the bowl. Cover and Allow to rise until double in size – about an hour.

Punch down the dough and spilt into 8-10 rolls. Place on a foil lined baking sheet (makes for easier clean-up), and allow the rolls to rise for about 30 minutes.

Meanwhile, put a large pot of water on to boil and heat oven to 450. Add the baking soda to the water. Once the water is at a boil – not big bubbles, just small, not really breaking the surface boil – place 2-4 rolls into the water (depending on the size of your pot!) Boil each side of the roll for about 30 seconds (about 1 minute per roll). Remove from water with a slotted spoon, and place back on the foil-lined baking sheet.  Cut 2 shallow slits on the top of each bun. Brush each roll with some egg and then sprinkle with some kosher salt.

Bake 13-15 minutes until golden brown. Cool and try not to eat the whole batch in one sitting….
