The first time I attempted a Cauliflower Pizza crust, it was a disaster. I probably could have saved it, but I apparently wasn’t having a good day, and threw it away and just made my 5-minute pizza dough.
Well, I decided to redeem myself and try again. I asked friends for their favorite recipes. I looked them all up and combined what I liked from each. It worked this time!
First, I will say that it tasted really good. Now, that being said, I doubt I’ll be making it again. While it was good, It just took too long to make. Maybe it is because I was having another bad day while trying to make it. I was trying to get it all ready for my husband to pop in the oven while I picked our son up from play rehearsal. Well, while trying to get it ready, the baby kept making himself throw-up because I wasn’t holding him and the 3-year-old was yelling because he was in the bathroom and noticed poop in his underwear. Yeah… Fun!
While it was good, I seem to just have bad mojo when it comes to this crust. I think I’ll stick to my 5-minute pizza crust or my FAVORITE Zucchini Pizza Crust – YUM!
Ingredients:
- 1 head of cauliflower
- 1 egg, beaten
- 1/4 cup Parmesan
- 1/4 – 1/2 cup Mozzarella
- salt
- garlic powder
- Any other Italian seasonings you’d like – basil, oregano, etc.
Directions:
Heat oven to 425
Place Cauliflower in food processor and pulse until it turns into a fine crumble – like rice. Then place in a bowl, cover with plastic wrap with a few holes punched in the top of the plastic. Microwave 4 minutes, then remove plastic. Pour into a mesh strainer and use a spatula to get all the water out. I even used a paper towel to push more out of the top. You could also place in a clean towel and twist to wring out the water. Place cauliflower back in the bowl and mix with cheeses, egg, and seasonings. Then press out on some parchment paper or I did on my pizza stone. Do one large one or you could do several personal pizzas. Bake in oven for 15-20 minutes until starts to brown on top. Top with whatever toppings you’d like!
