We like to do Taco Tuesday every Tuesday and I like to try different ways to do Tacos as much as possible. I have LOTS of different ways to make Taco Tuesday interesting every week. Of course, my kids are happy with just soft or hard-shelled tacos each week too.
This week, I thought I would try a Taco Lasagna. It turned out really good! I have lots of lasagna noodles to use up (got them cheap off Amazon), so this was a fun and different way to make both tacos and lasagna. YUM! It was good! We ate almost the entire pan!
Feel free to add in any mix-ins or toppings you’d like
Ingredients:
- 9-15 lasagna noodles (depends on the size of your pan and noodles)
- 1 lb ground beef, chicken, or turkey
- Taco seasoning of your choice
- Salsa – like Pace Picante
- Cheese – about 2 cups
- 16oz of cottage or ricotta cheese
- Any mix-ins you’d like – beans, olives, etc.
- Any toppings you’d like – sour cream, avocado, etc.
Directions:
Heat oven to 350
Boil or prepare your lasagna noodles according to box directions. My pan used more noodles than I thought it would! about 5 noodles each layer! I used a 13×9 pan. If I had wanted a top layer of noodles, I would have needed 15 noodles!
Cook your meat of choice with your favorite taco seasoning. I then add in a can of beans (pinto, black, etc.)
Place a layer of lasagna noodles on the bottom of your pan. Top with ricotta or cottage cheese and then your meat of choice. Add in any other mix-ins you’d like – beans, olives, etc.
Then top with cheese – I used a mixture of cheddar and an Italian blend mix of cheese – and your salsa (this is like the “sauce” of your lasagna).
Repeat. Bake at 350 to 30-45 minutes or until heated through
