German Pancake

I love German Pancakes! It is probably because the topping possibilities are endless! Plus you can add in any fruits that you want to the batter. They are super easy to make and delicious!

We have to make 2 pans to feed all of us. I usually make one plain pan and one with fruit – usually Apples.

I cook the apples in some butter, cinnamon, and brown sugar. Makes them soft and delicious!! Then just pour the batter over the top and bake. YUM!

Top with whipped cream or powdered sugar. Or honey. Or Maple Syrup. Or homemade jam. So many different options available! So good!

 

Ingredients:

  • 6 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1 cup flour
  • 1/2 tsp salt
  • Any toppings or cooked fruit add-ins you’d like

 

Directions:

Heat oven to 400 degrees

If using a 13×9 pan, place 2 tbsp of butter into the pan and put in the oven to melt the butter. Watch closely, as not to burn the butter. Move the butter around to coat the pan. If I am making with cooked fruit, I simply soften/cook the fruit in a large, oven-safe skillet (see picture below)

In a blender or food processor, combine the eggs, milk, and vanilla until smooth. Add in the flour and salt. Blend until just combined. Do not overblend.

Pour into buttered pan. OR pour over cooked fruit (For example, I cook a few apples in butter, brown sugar, and cinnamon until soft and they start to caramelize) in an oven-safe skillet.

Bake for 20 minutes until puffy and lightly browned on bottom and edges.

Serve with your favorite toppings.
