I am not a fan of marshmallows. You will never find me eating one. I like them in recipes and that is about it. I’ll occasionally eat a S’more (with a Reece’s!).
One evening, I was grocery shopping with my daughter and they had s’mores cupcakes as a sample. I decided to try one, thinking I’d scrape off the frosting. I was SHOCKED when I not only liked the frosting, It was seriously the BEST store-bought frosting I’d eaten (I do NOT like store-bought/bakery frosting. I always scrape it off. Costco cake center mousse is usually the only kind I like).
Apparently, I needed to give Marshmallow frosting a chance.
That next week, we were taking dinner to a family, so I thought it was a great chance to make some cupcakes to take with the dinner and try out the Marshmallow Frosting.
It was sooooo good! I was wishing I’d had a kitchen blowtorch for the pictures, but oh well. This frosting is now on my favorite frosting list! (Buttercream, Cream Cheese, PB, and Caramel!)
Homemade frosting is sooo easy to make. Seriously, don’t buy the stuff in the can – homemade is 1000 times better and oh so easy to make!
Ingredients:
- 1/2 cup butter – softened
- 1 7oz jar of Marshmallow fluff
- 3 cups powdered sugar
- 1 tsp vanilla
Directions:
Mix together the marshmallow, butter, and vanilla together. Once mixed, add in the powdered sugar. Whip until desired consistency. (can always add a bit of milk if needed)
