My husband made this Miso Garlic Chicken over the weekend. We had some leftover Miso from another recipe we tried out and were trying to come up with some new ways to eat the miso… So he came up with this Miso Garlic Chicken.
It was really tasty! We served it over rice, but you could easily serve over noodles as well. We will be making this again whenever we have Miso in the house! It is really simple to make and full of flavor (but not spicy for the kids!)
Ingredients:
- 1 – 2lbs of chicken (we used cubed Chicken Breasts)
- 4 tbsp butter
- 1⁄2 cup white miso
- 3 tbsp maple syrup
- 1-inch piece ginger, grated
- 8 garlic cloves – grated or finely chopped
- 1 tbsp rice vinegar (or regular if that is what you have!)
- Black pepper – to taste
- 2 scallions (optional)
Directions:
Take half of the butter and melt it with the garlic in a saute pan. Cook your chicken in the butter and garlic. While the chicken is cooking, mix the rest of your butter (soften or melt as needed), miso, maple syrup, grated ginger, vinegar, and black pepper together as a sauce. Once the chicken is mostly cooked, pour over the chicken. Bring to a simmer and finish cooking. Garnish with Scallions if desired (We were out!) Serve over rice or noodles!
