Churros

Ingredients
  

  • 2 cups of water
  • 2 cups of flour
  • 1 tsp salt
  • 1/4 cup sugar
  • 3/4 cup butter 1 1/2 sticks
  • 4 eggs
  • oil for frying
  • cinnamon and sugar I didn't measure, just mix until looks good

Instructions
 

  • Boil the water, butter, salt, and sugar together until the butter JUST melts.
  • Remove from heat and add in the flour. 
  • Stir until no lumps remain.
  • Allow to cool for a few minutes. 
  • Then add in the eggs ONE at a time.
    If it doesn't cool down, you'll scramble the eggs (you do NOT want this).
  • You can mix the eggs in by hand, but it'll take lots of arm strength. I used my stand mixer.
    Mix each egg in REALLY well. Make sure it's incorporated before adding in the second (and third and fourth - depending on the size of batch you are doing). 
  • Place dough in a piping bag with star tip or a Ziploc bag with the corner snipped off to the size you want. You could also just make Churro Bites (balls).
  • Heat Oil to 350
  • Pipe the dough directly into the oil. I used scissors to cut the dough when it got to the length I desired. 
  • Fry until golden brown - it only takes a few minutes on each side. 
  • Remove from oil and roll in cinnamon sugar mixture.
