Boil the water, butter, salt, and sugar together until the butter JUST melts.
Remove from heat and add in the flour.
Stir until no lumps remain.
Allow to cool for a few minutes.
Then add in the eggs ONE at a time.If it doesn't cool down, you'll scramble the eggs (you do NOT want this). You can mix the eggs in by hand, but it'll take lots of arm strength. I used my stand mixer. Mix each egg in REALLY well. Make sure it's incorporated before adding in the second (and third and fourth - depending on the size of batch you are doing). Place dough in a piping bag with star tip or a Ziploc bag with the corner snipped off to the size you want. You could also just make Churro Bites (balls).
Heat Oil to 350
Pipe the dough directly into the oil. I used scissors to cut the dough when it got to the length I desired.
Fry until golden brown - it only takes a few minutes on each side.
Remove from oil and roll in cinnamon sugar mixture.
