Churros

Another Snow day here! Crazy! I seriously started planning last night what I should make today for the snow day. I actually have another item planned to make, but I started with CHURROS! The breakfast of Champions, right?!?!

I looked at recipes and none really hit me as exactly what I wanted, so I made up my own. OH.MY!!! I hit this one out of the park!! They are so darn good!

When I did the first batch, I thought the tip was too small, so I switched to a huge tip. Well, that one was probably too big, because the middle had a hard time cooking all the way through, so I went back to the smaller one. They were so good!

I would have made a caramel or chocolate dipping sauce for them, but I had a baby that wanted me to put him down for a nap. By then, Half the churros were gone, so not much point… Next time.

These come together Quick! So this is a delicious and fast treat!

Ingredients: This is a BIG batch. Simply half the dough to make a smaller batch of Churros. I made the recipe so it is easily cut in half.

  • 2 cups of water
  • 2 cups of flour
  • 1 tsp salt
  • 1/4 cup sugar
  • 3/4 cup butter (1 1/2 sticks)
  • 4 eggs
  • oil for frying
  • cinnamon and sugar (I didn’t measure, just mix until looks good)

Directions:

Boil the water, butter, salt, and sugar together until the butter JUST melts.

Remove from heat and add in the flour. Stir until no lumps remain.

Allow to cool for a few minutes. Then add in the eggs ONE at a time.

If it doesn’t cool down, you’ll scramble the eggs (you do NOT want this). You can mix the eggs in by hand, but it’ll take lots of arm strength. I used my stand mixer. Mix each egg in REALLY well. Make sure it’s incorporated before adding in the second (and third and fourth – depending on the size of batch you are doing).

Place dough in piping bag with star tip or a Ziploc bag with the corner snipped off to the size you want. You could also just make Churro Bites (balls).

Heat oil to 350. Pipe the dough directly into the oil. I used scissors to cut the dough when it got to the length I desired.

Fry until golden brown – it only takes a few minutes on each side. Remove from oil and roll in cinnamon sugar mixture. Eat and enjoy!
