Since my daughter celebrated her 12th birthday in Hawaii, she wanted a beach cake for her birthday party with friends and family when we got home.
I had an idea in my head, so I didn’t even rely on any pictures to make the cake. It was EXTREMELY easy to make! My Husband now wants Graham crackers crumbs on all our cakes – he REALLY liked it! I know our cakes are a hit when all the kids come in and say “Wow! That is so cool!” Cool and easy cake – winner in my house!!
First, make the cake. Any cake (I used chocolate cake mix) or heck, use brownies! I love my brownies!
Then make my vanilla homemade frosting. Simply add some blue food coloring to the frosting, once it is whipped. I made a double batch, because I also made cupcakes from this recipe.
You are going to need a seashell chocolate mold. I was going to buy one off of Amazon, but it occurred to me to ask my sister in law if she already had one. Of course, she did, so I just borrowed hers. This is the one I used but here are a few others that look similar and don’t cost much: Here, Here, and here or even a silicone mold if you prefer! Lots of choices!!
I used both White Chocolate melting discs and some chocolate Chips. I pick up the melting discs in the bulk bins at our local Winco, but you can also get them off Amazon here, here, here, and here. Chocolate chips are easy to pick up in any grocery store or on Amazon.
Melt the chocolate. I melted them in the microwave. Once melted, I added in food coloring, to get my desired color (my daughter wanted pink and purple!). Then simply spoon the liquid chocolate into the mold and tap the mold down on the counter to get it even and smooth. You simply wait for it to cool, or if you’re impatient like me, put in the freezer for 5 minutes and they are ready to pop out of the mold. I then put the molded chocolate in a bag in the freezer, until I was ready to use them.
Then you simply need to take some graham crackers and turn them into crumbs. I used half a package and used my food processor to grind the crackers into crumbs!
After your cake is cooled, frost the entire cake with the blue homemade frosting. Once frosted, on half of the cake, sprinkle the graham cracker crumbs, making a wave like border with the other half of the cake. Then simply put your chocolate seashells on top. My 4 year old added all of them, that is why there are so many on the cake!
To make the cupcakes, I simply put the blue homemade frosting into a ziploc bag, cut off the end of the bag, and frosted the top of the cupcakes. Then my 4-year-old added a seashell to the top of each cupcake.
One of my FAVORITE purchases off of Amazon, is our cupcake stand. We use it all the time! Cheap too – great addition to our party supplies!
My daughter was THRILLED with how the cake and cupcakes turned out! She was happy, it was delicious and easy to make. Plus all the kids that come thought it was awesome! So another great birthday cake success!
