We LOVE Beignets! They are kid #3 favorite treat. It has been on my to make list for a while (I have made them before, but it’s been a long time), so I decided to make them for the 4th of July Party we were going to. Sure, not very “American,” but it is fried, sugary, and eat too many and you’ll gain weight. What is more American than that?! HA!
They are like $1 – $2 a piece whenever we buy them at restaurants. Yikes! Times 7 people (baby doesn’t eat them yet!) it can add up. This recipe makes TONS of beignets. Seriously, it makes A LOT of them. If you don’t want to be eating them for a week (but why wouldn’t you?!?!), you can cut the recipe in half. We just make it when we have other people to share with. We could probably eat the entire batch, but that probably isn’t the best idea for our waistlines!
I am making them again this weekend for #3’s birthday. We are celebrating before his brother goes off to camp and he really wants a beignet cake instead of a “real” cake. I’m totally good with that! Should hopefully be an easy feat to pull off?!?! Pictures to come of his beignet “cake”
Ingredients:
- 1 1/2 cups warm water
- 1/2 cup sugar
- 2 1/2 tsp yeast (or one envelope)
- 2 eggs
- 1 1/2 tsp salt
- 1 cup evaporated milk
- 7 cups flour
- 1/4 cup shortening
- oil for deep frying
- powdered sugar
Directions:
Mix water, sugar, and yeast in mixing bowl and let sit for 5-10 minutes. Add in the eggs, salt, and evaporated milk and mix. Add in half the flour and stir to combine. Add in the shortening and slowly mix in the rest of the flour. Knead until smooth. Cover with plastic wrap or a towel and let rise for 2 or more hours.
When ready to fry, heat oil to 350 degrees in a deep fryer or a large pot with about 2 inches of oil. Add powdered sugar to a paper bag and set aside. Roll out the dough to 1/4 inch thick and cut into squares. Deep fry, flipping constantly, until they are golden brown. Remove and allow to drain for a few seconds on a paper towel. Then toss them in the paper bag with the powdered sugar, close the bag and shake to coat evenly.
